HONEY COOKIES

Recipe from the Bee Club at the Mequon Nature Preserve


2/3 cup vegetable oil

1 cup granulated sugar

1/4 cup honey

1 egg

1 teaspoon vanilla

2 cups all-purpose flour

2 teaspoons baking soda

1/2 teaspoon salt

1/3 cup turbinado sugar



 

Preheat oven to 350 degrees F. In a large bowl, beat oil, granulated sugar and honey until smooth. Add egg and vanilla; mix well. In a separate bowl, combine flour, baking soda and salt; add to honey mixture. Shape dough into 1" balls (if dough is too soft, refrigerate 15-30 minutes until firm). Roll dough in turbinado sugar. Place on parchment-lined cookie sheets.


Bake at 350 degrees for 7-9 minutes or until edges are light brown. Cool on wire racks.


Yields about 4 dozen.
